Thanksgiving food - Squash Bake

Today I made 2 Shoofly pies, an apple cranberry pie, cranberry salad, and I mixed up potato bun dough to make tomorrow morning. I'm going to make rolls and cinnamon buns out of it. I can't wait to eat them! If I have time, I may post some of the recipes.
Tomorrow I am making the squash bake for the Thanksgiving meal. This is a recipe that is special because my mom makes it a lot, and I love to eat it:)

Butternut Squash Bake
1/3 c. butter or marg.
1/2 c. sugar
2 eggs
1 can (5oz.) evaporated milk
1 t. vanilla
2 c. mashed cooked butternut squash

Topping:
1/2 c. crisp rice cereal
1/4 c. brown sugar
1/4 c. chopped pecans or other nuts
2 T. butter

Cream butter and sugar. Beat in eggs, milk, and vanilla. Stir in squash. Pour into greased 11X7 pan. Bake uncovered 35-45 min. @ 350 degrees until almost set. Combine topping and spinkle over, return to over for 10 min. (or put it on at the beginning). (I sometimes use regular milk).

Thanksgiving

On this day to remember all that we are thankful for...

I will share some of my list. I started it while I was reading One Thousand Gifts, which I highly recommend.

118. ribbons and crafts ideas

119. busy day over, new day ahead

120. new shoot on the orchid

121. new healthy baby at the ranch

122. waiting for another friend's baby

123. breakfast with the oldest boy

124. fussy baby, so sweet

125. anticipation of opening day of deer season

126. encouragement night for children

127. special mugs

128. breakfast in bed made by the children

129. time to bake pies

130. smells of baking pies in the kitchen

131. long adventure stories

132. projects created in the workshop

I'm on my way to 1000 gifts.

God is helping my think of the good things, as I look intentionally for things to be thankful for.

Sometimes, when I see a mess, I am able to be thankful. I say sometimes because God is not finished with me yet. I am a work in progress....

Psalm 50:23 "He who sacrifices thank offerings honors me, and he prepares the way so that I may show him the salvation of God."

The Mighty Hunters

Mike and the boys have been hunting, and got a four point buck! Our freezer is getting filled for another winter. The wood stove has been started and the fire wood is stacked.

One Thousand Gifts

I am reading a wonderful book that I highly recommend to all women. It is called One Thousand Gifts by Ann Voskamp. Here are the websites with more information. My friend, Cindy recommended the book, and I found it at the library.

I have started a list of things I am thankful for, which is the beginning of my journey toward much needed joy.
