Today I made 2 Shoofly pies, an apple cranberry pie, cranberry salad, and I mixed up potato bun dough to make tomorrow morning. I'm going to make rolls and cinnamon buns out of it. I can't wait to eat them! If I have time, I may post some of the recipes.
Tomorrow I am making the squash bake for the Thanksgiving meal. This is a recipe that is special because my mom makes it a lot, and I love to eat it:)
Butternut Squash Bake
1/3 c. butter or marg.
1/2 c. sugar
2 eggs
1 can (5oz.) evaporated milk
1 t. vanilla
2 c. mashed cooked butternut squash
Topping:
1/2 c. crisp rice cereal
1/4 c. brown sugar
1/4 c. chopped pecans or other nuts
2 T. butter
Cream butter and sugar. Beat in eggs, milk, and vanilla. Stir in squash. Pour into greased 11X7 pan. Bake uncovered 35-45 min. @ 350 degrees until almost set. Combine topping and spinkle over, return to over for 10 min. (or put it on at the beginning). (I sometimes use regular milk).
