I learned to make this
kind of pizza from Eileen Czaja, my mother-in-law. When she makes pizza, it is always amazing! She uses sourdough crust from Berkshire
Mountain Bakery, in MA.
Ingredients:
Crust: I use Trader Joe’s (2 packs of 2) these
are long rectangles of chewy bubbly dough
Other crust options: Whole-Wheat Homemade Crust just put the bread machine on dough setting, Naan (about one
for each person), Berkshire Mountain Bakery sourdough crust
Olive Oil
2-3 garlic cloves,
minced
1 (28 oz.) Organic
Diced Tomatoes, drained and cut up a little more
fresh basil leaves
(or dried seasoning, if you are in a pinch)
2, 8 oz. blocks of Mozzarella
Cheese

1. Preheat oven to 425
degrees or hotter (Mom Czaja makes it in a 500 degree oven). Heat pizza stone in oven or use cookie
sheets.
2. Drizzle crust with olive oil, and rub garlic on crust. Layer other ingredients: tomatoes, basil, cheese, and any other toppings you like.
3. Bake about 7 minutes.
