I do not recommend freezing water cress!!! So far, we used two bags of it. One, I cooked like a vegetable side with some seasonings and olive oil. The comments I got were, "Oh this is stringy!" and "Interesting!" Then, I tried to use it in a smoothie. I used a whole bag, and it was the worse smoothie I ever made (and I have made some pretty bad ones:) Only Mike finished it, with the comment, "I'm going to drink this whole thing because it is good for me." He is a good sport:)

We have water cress growing in our creek. My parents gave me some with roots a few years ago, and I just put it right in an area that does not flow very fast. It grew and multiplied abundantly. Every spring it is one of the first additions to our fresh salads. This is the first year I decided to freeze some. I plan to put it in soups and dishes in the winter.
I cut it off, washed it well, blanched it for one minute, then ran cold water over it, then put it in freezer bags. I got 15 quart bags. It took a while to wash it, but now it is all done. That is one thing I learned from reading my great great grandmother's diary: get the produce when it is in season and put it up for the winter.
