Classic Chili, As Easy as 1 2 3
This recipe was adapted from Feeding the Whole Family by Cynthia Lair
Ingredients:
2 med. onions
1-2 pounds ground beef (or 1/2 c. quinoa, if you are vegetarian or vegan)
2 tsp. sea salt
4 garlic cloves, minced
1-2 lg. green peppers
2 tsp. dried oregano
1 tsp. cumin
1/2 tsp. cinnamon
2 Tbsp. chili powder
1/4 tsp. cayenne pepper
1 15 oz. can kidney beans
1 15 oz. can pinto or black beans
1 28 oz. can diced tomatoes
1 15 oz. can tomato sauce
Steps:
1. Saute onions and brown beef
2. Add all other ingredients and simmer 20 minutes.
3. Optional Side: Brown rice, corn bread, salad
